Our story

A way of understanding food

Grupo Oleilú was born in Seville in 2016 with a clear purpose: to create food and drink venues with their own identity, where Andalusian produce, tradition and attention to every detail are the starting point of every experience.

The name says it all: a blend of “olé” and “luz” (light), the authentic flavour of Andalusia and the long hours of sunlight in our land. Warm, festive and luminous, just as we want every visit to be.

Each of our venues, from Taberna Bidón, Bar La Pescadería and Bar La Gavidia in Seville to Casa Palacio Balbaína in Córdoba, has its own personality, its own cuisine and its own story. They all share the same philosophy: honest, welcoming, quality food.

Mission

Creating experiences people remember

Our mission is to create places where food is enjoyed authentically. We champion Andalusian produce, respect for tradition and care for every detail, so that every visit becomes a memorable experience.

We achieve this thanks to the commitment of the people who make up Grupo Oleilú: we nurture talent, look after our teams and work every day with the same passion for quality, warmth and excellence.

Values

What defines us

Produce

The best results start with great ingredients. We select quality Andalusian produce and work with suppliers who share our commitment to origin, seasonality and authenticity.

Experience

We believe the difference lies in the small details. We take care of every dish, every space and every service so that each visit becomes an authentic experience.

Excellence

We love Andalusian food and enjoy sharing it. Our team’s dedication, commitment and hard work show in every dish and in every one of our venues.

Origin

Seville is where our story began. From its markets, its culture and its way of life comes a way of understanding food rooted in Andalusian produce and tradition.

Our journey

Our path

  1. 2016

Grupo Oleilú is born in Seville

We started out in Seville’s historic centre with the idea of creating venues with their own personality, built around Andalusian produce.

  2. Seville city centre

    Bar La Gavidia

We grew in the old town, in Plaza de la Gavidia, building a team and a way of working.

  3. 2026

Taberna Bidón and Bar La Pescadería

We opened two new venues in Plaza del Pan: in February, Taberna Bidón, a classic Sevillian tavern; in June, Bar La Pescadería, a tribute to the city’s old food markets.

  4. 2026

    Casa Palacio Balbaína, in Córdoba

We opened our first venue in Córdoba: a tavern and restaurant in a palace house a few steps from the Mosque-Cathedral.

  5. Coming soon

    Bar Gonzalo and Zarabanda

Two new venues on the way: Bar Gonzalo in Seville and Zarabanda in Córdoba. Meanwhile, we keep investing in and advising hospitality projects all over Spain.

“A great experience is born from respect for the produce, from care in every detail and from the way we make our guests feel.”
